My mom, my two sisters, my daughter, and myself, met a few weeks back (prior to social distancing, don’t worry!) for a Mother-Daughter movie date. We are a close knit family and enjoy one another’s company and thought the new Little Women movie would be a fun one to watch together. We laughed, cried, and enjoyed each character!
Little Women Movie
Based on the classic Little Women novel and the writings of Louisa May Alcott, I adored the newest Little Women film. It is heartfelt, beautifully acted (I love Emma Watson), and thoughtfully directed (director Greta Gerwig). This classic film is a mix of its historic roots running on present-day energy, about family, dreams, love, success, and adventure in the years of the Civil War. Portraying Jo, Meg, Amy, and Beth March, the film stars Saoirse Ronan, Emma Watson, Florence Pugh, Eliza Scanlen, with Timothée Chalamet as their neighbor Laurie, Laura Dern as Marmee, and Meryl Streep as Aunt March.
The movie will make you feel so extremely good after watching it. I promise you that!! The four March sisters and their close family remind me so much of my family, we are all very passionate about each other’s lives and we are always willing to help in anyway. Little Women is an absolutely lovely film which is out now on Digital, Blu-ray™ and DVD. I hope you can too get a chance to watch the four sisters as they encounter remarkable transitions from adolescence to adulthood, each determined to live life on her own terms.
Healthy Strawberry Cheesecake Cups
I had previously seen Little Women and felt inspired by all of Marmee and Hannah’s beautiful baking and thought it would be fun for the ladies to enjoy a sweet treat during our Mother-Daughter movie date. My family and I enjoy our sweets, though we always try to find a way to make it healthier. I’ve created this healthy and easy recipe that you can make in under 30 mins. The strawberry cheesecake cups could be prepped the day before and will keep in an air-tight container in the fridge for up to 5 days BUT you won’t keep it around long!
Before you begin, I bet it’s already ingrained in your head to wash your hands before starting anything! We for sure have been following the rules to prevent sickness!
Who doesn’t love something high in protein, lower in sugar, creamy on a whole other level, desserty, yet snack-able in all the right ways? This recipe does all of that, though you can substitute to your heart’s desire.
Mix It Up and Chill!
Gather all filling ingredients into one bowl. Mix with a hand mixer for a few minutes, over-beating can cause cracking. Chill the filling until firm, though this is not required.
Cut the strawberries to your desired size, set aside. Cut the angel food loaf (store bought or freshly baked) into 1″ cubes, set aside.
Fill and Layer Those Jars
We all had a grand ol’ time filling and layering up our jars! Grab an 8oz mason jar and layer all ingredients. Start with angel food cubes as a base, layer with cheesecake filling, add strawberries, then more filling, and garnish with strawberries, chocolate chips, or any topping that you like!
We ate, laughed, and cried during our Mother-Daughter date, inspired by Little Women. Hope you can plan something as memorable and fun as we did! Try out our recipe too, I bet it’ll be come a new favorite!!
Make this healthy and easy strawberry-cheesecake cups with simple ingredients.
- 16 oz cream cheese, softened (I used 1/3 fat, can substitute full fat)
- 1 cup greek yogurt (can substitute 0% fat)
- 1 1/4 tsp pure vanilla extract
- 1 1/2 tsp lemon juice (optional)
- 3 tbsp honey (add more to taste)
- 2 tbsp sugar (add more to taste)
- 1 store bought angel food cake (loaf is easier to cut into 1″ cubes)
- 1 container of fresh strawberries (add more to taste)
- chocolate chips for topping (optional and sprinkle)
- 6, 8 oz mason jars (this recipe yields 6 jars)
